Small vegetarian vegetable cakes

Ingredients (6 cakes): 150g chickpea flour, 200g plant-based milk, 100g water, 100g grilled vegetables (or any other garnish!), 1 tablespoon mustard, 1 tablespoon chopped chives, 1 clove of garlic, 1/2 teaspoon turmeric, herbs to taste.

Preparation: 1. Mix the flour, plant-based milk, water, and herbs into a homogeneous mass. 2. Add the mustard, chives, garlic, and the pre-cut grilled vegetables and mix everything together again. 3. Apply a little fat to small non-stick molds. Fill the molds 3/4 full with the mixture. 4. Place your cakes in an oven preheated to 250°C for 16 to 20 minutes and serve them warm!

Mini pizzas as an appetizer

Ingredients (for 4 people): 80g gluten-free flour, 50ml water at room temperature, 5g gluten-free baker's yeast, olive oil, a small jar of tomato sauce, grated cheese, garnish of choice (suggestions: pieces of fig, fresh cheese, balsamic glaze, and nuts).

Preparation: 1. Mix the flour in a bowl with the lukewarm water. 2. Add the flour and a tablespoon of olive oil. Mix until you get a smooth ball of dough. 3. Place the ball of dough in a bowl and brush with a little oil. Then cover the bowl with a kitchen towel and let the dough rise for 2 hours. 4. Roll out the dough on a floured work surface, and then make small circles with a diameter of 4-5 cm using a cookie cutter or a glass. 5. Garnish your mini pizzas and place them in an oven preheated to 220°C for about 10 to 15 minutes. 6. Remove the pizzas from the oven, add a final drizzle of olive oil or a few fresh basil leaves and they're ready to serve!
Caramelized cherry tomatoes with sesame

Ingredients (for 6 people): 250g cherry tomatoes, 200g sugar, 100ml water, sesame seeds, 2 tablespoons balsamic vinegar.

Preparation: 1. Mix the sugar and water in a saucepan and heat gently. When the mixture starts to thicken, add the balsamic vinegar while stirring. Let it cook over very low heat until the caramel is ready. 2. Put the sesame seeds in a plate or small bowl. 3. Skewer the cherry tomatoes on wooden sticks, dip them one by one into the caramel, and then roll them in the sesame seeds. 4. Place them on a sheet of parchment paper and wait for the caramel to harden before serving.
