These waffles are made without wheat flour or other ingredients that contain gluten, such as rye, barley or spelt. Instead, NOGLUTEN PLUS flour, based on gluten-free wheat starch, is used to achieve a similar texture.
Ingredients
- 250 g flour Nogluten PLUS
- 200 g sugar
- 4 eggs
- 250 g butter (unsalted)
- 2 g salt
- 5 g Nutriton (locust bean gum)
- 2 sachets of vanilla sugar
Preparation
- Beat butter and sugar briskly.
- 1 at the time, whisk the egg yolks under the butter mixture until slightly creamy.
- Whisk the egg whites separately and set aside.
- Gently mix the flour into the butter-egg mixture, then gently fold in the beaten egg whites.
- Let everything rest overnight in the fridge.
- Bake in very hot iron.
- Let warm waffles cool in a well-sealed plastic box.
