Vanilla waffles

These waffles are made without wheat flour or other ingredients that contain gluten, such as rye, barley or spelt. Instead, NOGLUTEN PLUS flour, based on gluten-free wheat starch, is used to achieve a similar texture.

Ingredients

  • 250 g flour Nogluten PLUS
  • 200 g sugar
  • 4 eggs
  • 250 g butter (unsalted)
  • 2 g salt
  • 5 g Nutriton (locust bean gum)
  • 2 sachets of vanilla sugar

Preparation

  1. Beat butter and sugar briskly.
  2. 1 at the time, whisk the egg yolks under the butter mixture until slightly creamy.
  3. Whisk the egg whites separately and set aside.
  4. Gently mix the flour into the butter-egg mixture, then gently fold in the beaten egg whites.
  5. Let everything rest overnight in the fridge.
  6. Bake in very hot iron.
  7. Let warm waffles cool in a well-sealed plastic box.
