Sugar Waffles

These waffles are made without wheat flour or other ingredients that contain gluten. Instead, NOGLUTEN PLUS flour, based on gluten-free wheat starch, is used.

Ingredients

  • 375 g flour Nogluten PLUS
  • 9 g Nutriton (locust bean gum)
  • 1 egg + 2 egg yolks
  • 25 g sugar
  • 135 ml lukewarm milk
  • 9 g fresh yeast
  • 200 g softened butter (unsalted)
  • 2 sachets of vanilla sugar
  • 2-3 g of salt
  • 250 g pearl sugar

Preparation

  1. First dissolve the fresh yeast in lukewarm milk.
  2. Add the salt and Nutriton to the flour and mix.
  3. Then add all the other ingredients except the pearl sugar.
  4. Knead into a nice firm batter.
  5. Finally, mix in the pearl sugar.
  6. Let the dough rest for half an hour.
  7. Make dough piles of +/-50g and bake in a very hot iron.
