These waffles are made without wheat flour or other ingredients that contain gluten. Instead, NOGLUTEN PLUS flour, based on gluten-free wheat starch, is used.
Ingredients
- 375 g flour Nogluten PLUS
- 9 g Nutriton (locust bean gum)
- 1 egg + 2 egg yolks
- 25 g sugar
- 135 ml lukewarm milk
- 9 g fresh yeast
- 200 g softened butter (unsalted)
- 2 sachets of vanilla sugar
- 2-3 g of salt
- 250 g pearl sugar
Preparation
- First dissolve the fresh yeast in lukewarm milk.
- Add the salt and Nutriton to the flour and mix.
- Then add all the other ingredients except the pearl sugar.
- Knead into a nice firm batter.
- Finally, mix in the pearl sugar.
- Let the dough rest for half an hour.
- Make dough piles of +/-50g and bake in a very hot iron.
