Allergen-free food
Allergens or sensitizing substances, according to the Health Council definition, are substances that can cause a hypersensitivity reaction through activation of the defense system (immune system). The hypersensitivity manifests as inflammatory reactions, resulting in various allergic disorders.
The 14 allergens you must inform consumers about, based on European Regulation 1169/2011, are gluten-containing cereals, egg, fish, peanut, tree nuts, soy, milk (including lactose), shellfish, mollusks, celery, mustard, sesame seed, sulfite and lupin (May 25, 2022).
Allergen-free products contain no ingredients (recipe) containing an allergen. The product is produced under controlled conditions to eliminate cross-contamination.
