Pasta salad with chicken, honey and mustard dressing

This delicious and fresh salad is perfect for summer picnics, barbecues or as a light meal at any time of the year. With a tasty dressing of honey and mustard, there is a perfect balance of sweet and savory.

Ingredients

For 4 persons

  • 350 g pasta of your choice
  • 1 bouillon cube
  • 1/2 cucumber cut into thin strips
  • 8 radishes thinly sliced
  • 250 g cherry tomatoes in wedges
  • 100 g feta cheese
  • 75 g arugula

For the chicken

  • 2 pieces of chicken breast
  • 3 tbsp olive oil
  • 1 tsp paprika powder
  • 1 tsp curry powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tbsp lemon juice
  • black pepper and salt

For the honey mustard dressing

  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tsp mustard
  • 2 tbsp. honey
  • 1 tbsp lemon juice
  • pinch of black pepper
  • pinch of salt
  • 1/2 tsp paprika

Preparation

  1. Mix all the ingredients together for the honey mustard dressing.
  2. Mix the spices with the oil and lemon juice for the marinade for the grilled chicken. Marinate the chicken with the prepared marinade.
  3. Cook the pasta until tender with the bouillon cube and rinse under cold water.
  4. Grill or fry the marinated chicken breasts until golden brown and cooked through, then cut into thin strips.
  5. Mix the cooked pasta with the honey mustard dressing, half the arugula, cucumber, radishes and tomatoes. Divide the chicken strips and crumbled feta over the top, along with the rest of the arugula. (You can also mix all the ingredients in one large bowl.)
  6. Add a splash of extra olive oil to the pasta salad, if desired. For extra flavor, you can also add freshly ground black pepper.
