These delicious cookies are a real treat for lovers of sweet and spicy flavors, perfect with tea, coffee or just as a tasty snack at any time of the day.
Ingredients
For 40 cookies
- 150 g butter
- 250 g honey
- 250 g brown sugar
- 400 g flour
- 100 g almond powder
- 2 tsp speculaas spices
- 1 tsp lemon peel (grated)
- 1 egg
- ½ tsp baking powder
- 2 tbsp water
Preparation
- Put the butter with the honey and sugar in a pan. Let melt on alow heat until the sugar is completely dissolved. Let the mixture cool down.
- Add the almond powder, flour, spices, lemon zest and egg to the honey butter, and mix well.
- Dissolve the baking powder in water and add to the dough. Knead until the dough is shiny and no longer sticky. Cover the dough with plastic wrap and let it rest overnight in the fridge.
- Preheat the oven to 180°C. Roll out the dough on a floured work surface and cut out shapes. Place them on a baking tray lined with baking paper and bake in the oven for 15 to 20 minutes. Then let the cookies cool on a wire rack.
